The Creamy Cucumber Radish Salad Recipe is a simple healthy salad, with a ton of flavor and a crunchy texture. This summery salad which is also perfect for the warmer months is great because it uses a handful of ingredients which include sliced cucumbers, crisp radishes, green onions, hard-boiled eggs, dill, and mayonnaise.
With fresh produce and in this case crunchy vegetables, there’s no other way to enjoy a green salad than to combine it with the best source of protein: free-range organic eggs! After the habit of only eating free-range organic eggs, the factory-cooked white eggs are almost impossible to consume. There is definitely a difference in flavor.

Key Ingredients for the Creamy Radish Cucumber Salad
Radish: I have always used the red crunchy radishes. I’ve not tried this salad with other varieties, but it is one of the tastiest raw vegetables that you can eat. The red hue adds a vibrant pop of color to the salad.
Whole Eggs: I like brown free-range organic eggs as the taste is more appetizing but any other eggs will do.
Fresh Cucumbers: The cool cucumber will balance the peppery flavor of the radish.
Green Onions: Gives a delicious crunchy texture to the salad.
Fresh Dill: Adds a refreshing flavor which makes a great difference in this recipe.
Avocado Mayonnaise: This is the dressing that ties everything together.
Salt and black pepper to season, if you want. Usually, I find that the mayonnaise has just enough flavor as the salad dressing.

How to Make Cucumber Radish Dill Salad
Step 1: Boil eggs
Place eggs in a large pot and boil them for 5-7 minutes on medium-high heat.
Step 2: Remove eggs from heat
Remove the eggs from heat, place in cold water, and set aside. Once cool, remove egg shells and chop them.
Step 3: Slice and chop the vegetables and fresh herbs
While eggs are boiling, slice radishes and cucumbers then cut them into quarters. Chop fresh dill and green onions.
Step 4: Mix everything with creamy dressing
Place radish slices, cucumber slices, onions, dill, and hard-boiled eggs in a large bowl and coat with avocado mayonnaise.
Step 5: Season and serve
Add salt and black pepper to your taste. You can chill in the fridge for an hour, do a final toss, serve, and enjoy!
Expert Tips
- Green onions are the perfect choice in this recipe as they have a mild onion flavor. They don’t overpower the other ingredients like a red onion or white onion would.
- Use English cucumbers or Persian cucumbers because of their thin skin and small seeds.
- If you are using a regular cucumber, peel them because of the thicker skin and remove some of the seeds.
- For best results, only add the dressing when you’re ready to serve. That’s because the cucumbers release excess water which makes the salad watery.
- You can substitute the avocado mayonnaise with Greek yogurt, and creamy sour cream dressing for a tangy flavor.
- If you prefer more flavor, you can add a little bit of fresh lemon juice.
- Use a sharp knife or mandolin for uniform slices of cucumbers and radishes.
- Chill the salad for at least an hour after making it because the longer it sits, the better it’ll taste as the flavors come together.
How to Store Leftover Creamy Cucumber Salad
- The salad is best eaten right away. But if you have leftovers, store them in an airtight container in the refrigerator for up to 2 days.
- A bit of liquid from the cucumbers may accumulate at the bottom so just drain that off. Stir everything together again before serving.
