The first time I made this delicious summer salad, I was met with a lot of uncertainty. Not from my end. My kids weren’t too crazy about the ingredients in this salad. My husband was a little skeptical too. To be fair, goat cheese, almonds, strawberries, lettuce, and spring greens? I can see how people might be a little hesitant.
But let me assure you, these ingredients come together beautifully here. Every single ingredient serves a purpose. Nothing tastes like it’s out of place. Every texture, every flavor, is thoughtfully there. These ingredients did not come together by accident.

Strawberries: These bright, red, juicy berries are an excellent source of Vitamin C. They’re also rich in antioxidants.
Greens. I’ve added both lettuce and spring greens here. With greens, you’re sure to get to get a good amount of Vitamin C and Vitamin K. Plus greens have some serious immune-boosting properties.
Goat Cheese. One serving of goat cheese provides plenty of protein as well as calcium, copper, phosphorus, and healthy fats.
Almonds. Everyone knows almonds are highly nutritious. They are rich in healthy fats, antioxidants, and plenty of vitamins and minerals.

Summer Berry Salad with Goat Cheese and Almonds
Equipment

- salad bowl
Ingredients
- 1 cup romaine lettuce
- 1 cup spring mix
- 1 handful strawberries
- 2 Tbsp goat cheese, soft
- ½ tsp lemon zest
- ¼ cup roasted almonds
- 1 Tbsp maple syrup
- salt, to taste
- ⅛ tsp chili pepper flakes
- 2 Tbsp olive oil
- ½ tsp Dijon mustard
- 1 Tbsp lemon juice
- salt, to taste
- black pepper, to taste
Instructions
- In a skillet over medium-low heat add almonds and maple syrup. Stir to coat evenly. Stir constantly for about 2-3 minutes, being careful to not burn them.
- Remove pan from heat and transfer almonds onto silicone mat or parchment paper. Sprinkle it with salt and chili flakes.
- Make dressing. Place all ingredients in a bowl and whisk until combined. Or put all of the ingredients in a jar and give it a shake.
- Wash the salad leaves. Wash and slice the strawberries.
- To assemble the salad, place greens on a plate for the base. Add sliced strawberries on top and crumble goat cheese. Then drizzle with dressing and sprinkle caramelized almonds on top.
