Easy Christmas Wreath with Avocado Dressing
- Serving plate
- 1½ cup arugula
- ¼ cup pomegranate seeds
- ¼ cup feta cheese
- ¼ cup avocado oil
- 1 tsp honey
- 1 clove garlic
- ½ avocado, pitted & peeled
- ½ lemon, juice only
- 3 Tbsp orange juice
- 1 pinch salt
- Blend avocado dressing ingredients together for 1 minute or until smooth. Set aside.
- Arrange arugula, pomegranate seeds, and 1/4 cup crumbled feta cheese on a plate.
- Drizzle salad with avocado dressing.
