Healthy cauliflower steaks might be a new menu item in your house, but I can assure you that you’ll be making it repeatedly. It’s the perfect taste of roasted veggies with fresh pesto. Need I say more?

You may not think you could use a whole cauliflower head in one meal, but I can assure you that this steak will fly off the table. Above all other cauliflower recipes, this one reigns supreme. Vegetarians, vegans, and even any steak eater can unite at one table that holds the perfect cauliflower steak. Olive oil, paprika, and garlic powder add the perfect touch of spice that makes this recipe a family favorite. Grilled cauliflower steak is an excellent option for summer, but this recipe holds up in the winter when you can cook it in the comfort of your warm home.

Cauliflower might just be my favorite vegetable. You can make cauliflower pizza crust, cauliflower buffalo bites, cauliflower rice, and cauliflower salads, all from simple heads of cauliflower. There are spices galore. That touch of a little olive oil, about a teaspoon of salt and black pepper, and maybe some lemon zest make the perfect…. anything, really. This great recipe is just another one in a long list of favorites. There may be all kinds of vegetables that are low carb, but none of them really compare to all the roles that cauliflower can play in your diet. It’s limitless! It can very much be the popular vegetarian option at your next BBQ.

Simple Pesto Sauce for Steak with Pine Nuts

You might find different recipes for this steak, but I can assure you, there is no better pesto recipe. With pine nuts, parmesan, lemon juice, garlic, olive oil, and the perfect amount of salt and pepper, you’ll be finding yourself making this favorite pesto recipe again just as soon as it’s eaten. Made with easy-to-find ingredients: Spinach, Olive oil, parmesan cheese, lemon juice, garlic clove, pine nuts, salt, and pepper to taste.

It can dress up your simple summer meal tonight, too. It dresses up the best steaks that you’ll ever enjoy, whether it’s one of your first times making it or you’re a seasoned professional (pun intended). It’ll be the crowning glory of your meal plans. Who knew a small bowl of spices can go such a long way? I do, which is why I love sharing these tasty recipes and other little bits of my kitchen with you.

Cauliflower A head of cauliflower is the secret weapon of a low-carb kitchen. Your taste buds and body will thank you for the benefits it provides.

Olive oil is a great source of vitamin E and vitamin K.

Paprika, garlic powder, and salt add spice and good flavors to this veggie steak.

Steps

For the pesto:

Blend 2 cups of spinach, 1/2 cup olive oil, 1/3 pine nuts, 1/3 cup grated parmesan, 2 tsp lemon juice, 2 garlic cloves, and salt and pepper to taste all in a food processor until smooth.

Preheat the oven to 400°F. Cover the baking sheet with parchment paper.

On a cutting board, with a sharp knife cut cauliflower into 1″ thick steaks. (cut away the outer leaves)

Place cauliflower steaks onto a prepared baking sheet.

Drizzle each steak with olive oil.

Sprinkle steaks with garlic powder/paprika/salt mix.

Bake in a preheated oven for about 15 minutes until the tops are browned.

Remove from the oven, and gently flip each steak. Drizzle the other side with olive oil and sprinkle with spices.

Place back in the oven and bake for about 10 minutes.
