I remember the very first time I tried butternut squash fries. You guys, my mind was blown. Well, kind of. I mean, they tasted like very well-roasted butternut squash. With the perfect seasoning. But I never thought of making them in french fry form. You know?

Fast forward to many years, and I find myself choosing butternut squash fries more often. Now I know they might be higher in carbs, and even in calories, but they taste amazing to me. Plus, I’ll take the added nutritional perks like higher Vitamin A content and high fiber.

So then I began experimenting. If we can have butternut squash fries, what are our limits? They’re endless I tell you, endless!

I remember how much I had fallen in love with squash this past year. While I was pursuing the grocery store aisles one day, I went to a sweet little corner stacked with various squash. I picked one up. Here’s the thing. My knowledge (and experience) with squash was very limited. I would mostly only have it during Thanksgiving. Anyways. I brought this bad boy home and absolutely devoured it. I loved its sweetness. Its lightness.

I brought it home every single time I went to get groceries. I’m sure my family grew tired of it but that wasn’t stopping me. I had to compensate for all the butternut squash I missed out on my entire life!

But I had to change things up. So I made these delicious homemade butternut squash fries. I sliced them into fries, tossed them with some good ole’ EVOO, and sprinkled with some sea salt! Voila! That’s it!

These homemade butternut squash fries are my new jam! I hope you’ll love them just as much as I do!
