  • 1 head cauliflower, chopped
  • 1 small zucchini, sliced
  • 1 pinch sea salt, or to taste
  • 3 Tbsp extra virgin olive oil
  • ½ cup onion, chopped
  • 2 eggs, beaten
  • 1 cup mixed frozen veggies


  • Chop florets from cauliflower into very small pieces.
  • Heat 3 tablespoons of extra virgin olive oil in a pan.
  • Add in chopped cauliflower florets and fry for 3-4 minutes or until cauliflower starts to brown up; stir frequently.
  • Add in 1/2 cup of chopped onion and fry for another minute.
  • Add in 1 cup of frozen vegetables. (You could also use fresh ones if you want.)
  • Slice zucchini, and also add to the pan.
  • Stir everything together. Sauté for 2 minutes.
  • Turn heat down to the lowest.
  • Beat 2 large eggs in a small bowl or plate and pour into the pan. Stir right away, and continue stirring like you would for scrambled eggs.
  • Add a pinch of sea salt, or add salt to your taste.
  • Sauté for 4 minutes, then serve!
