An upside-down cake is simply a cake that is baked with the “toppings” on the bottom of the pan and the cake batter on top. It is prepared and baked and then flipped over before serving. So those toppings that disappeared under the batter are beautifully sitting on top now.

I get that people are intimidated to flip an upside-down cake. Here’s how you flip it:
Put a plate over your cake pan and, using both hands, flip. Now the plate should be on the bottom and the cake pan on top (but upside down.) Carefully lift up the cake pan and your cake should slip right out!

Easy Upside-Down Peach Cake Recipe
Equipment
- Spatula set

Ingredients
- 5 large eggs
- 1 cup sugar
- 3 drops vanilla extract
- ½ tsp baking powder
- 1 cup unbleached flour
- 3 fresh peaches sliced
- ¼ cup powdered sugar
- Pam or butter, for the cake not to stick to the pan
Instructions
- Preheat oven to 350F.
- Butter up a 9″ cake pan.Pam or butter,
- Slice the peaches, removing the pit. Spread the slices on the bottom of the buttered cake pan.3 fresh peaches
- Beat together the eggs and sugar on full speed, until well blended.5 large eggs, 1 cup sugar
- Add to the eggs vanilla extract and continue beating for another minute.3 drops vanilla extract
- Bring speed to low and add in baking powder and unbleached flour. Let it all incorporate together for about a minute-no more.½ tsp baking powder, 1 cup unbleached flour
- Spread the batter on top of the sliced peaches in the cake pan.
- Bake for 25-30 minutes, or until you can gently stick a toothpick in and it comes out clean.
- Turn the cake upside down to a plate and take the cake form off.
- After cake cools down, sift powdered sugar on top of the cake.¼ cup powdered sugar
