A sharlotka cake is a sponge cake filled with apple pieces. Many recipes layer the apple pieces on top of the batter. It’s similar to a fruit upside down cake!

Where did sharlotka come from?

Sharlotka is common in Russian cuisine. It was created by a French chef for the Russian Czar Alexander I. The name “sharlotka came from it’s popular first name, Charlotte Russe. It grew in popularity during the Soviet era and to this day is one of my classic Russian food recipes we love to make at home.

Tips To Make The Perfect Sharlotka Apple Cake

Start by mixing your wet ingredients. Then slowly, add in the dry ingredients. The base of this dessert is formed with a batter that looks very much like pancake batter. Start by combining the eggs, sugar, and vanilla before adding in the baking powder and flour. All of these ingredients can be found at the grocery store year round. I recommend using fresh fall apples for any apple desserts.

Try to slice your apples evenly. You don’t want some slices to be overbaked while others are too tough to cut through. Ensuring that all the apple slices are about the same size will result in a uniform texture throughout this light cake.

Ingredients

  • 6 apples, peeled
  • ½ cup sugar
  • 3 eggs
  • ¾ cup flour
  • 1 splash vanilla extract
  • ½ tsp baking powder
  • 1 Tbsp powdered sugar

Instructions

  • In a mixer beat together 3 eggs and 1/2 cup sugar on medium speed.

  • Add in a splash of vanilla and ½ teaspoon baking powder.

  • Turn on to low speed and add in ¾ cup flour, mix it all together.

  • Peel and slice the apples.

  • Spray a tart or cake pan and place apple sliced on the bottom of the pan.

  • Pour the batter over the apples.

  • Bake in the oven for 30-40 minutes at 350°F.

  • Once finished baking, flip it over onto a plate so the apples are on top.

  • Let if cool down for 10 minutes then sift some powdered sugar on top. Enjoy!
