A simple celery and apple salad with Almonds and Dates is all you need this spring. It may sound unusual, but the flavors come together so good.

With spring in the air, there’s no sleeping on this simple salad. It pairs well with fish, duck, or even a rotisserie chicken.

You don’t need leafy greens to be in every single salad for you to get in those whole foods and your daily greens. This sliced celery salad is an example of exploring outside of lettuce and introducing fun new flavors in your salads!

Crisp apples, fresh lemon juice, and sweet dates make this fresh salad a unique one. Dates in a salad? This may be a first for you, but it’s actually an amazing combination! Simple salads like this one are always ones that I will put together as a side dish for a good meal.

There’s barely any ingredients in this easy salad.

With only 4 salad ingredients, celery, apples, almonds and dates and 4 simple ingredients in the salad dressing, putting this salad together isn’t a hard task. I like to drink celery juice in the morning and use the leftover celery for this salad.

4 Ingredient Salad Dressing

Tahini paste: Can be found whole foods or any major grocery stores.
Lemon: Just juice form a half of the lemon.
Water: Hot water.
Sweetness: Honey

Similar to a traditional Waldorf salad, this simple celery rib and sweet apple salad combines nuts and fruits. Toasted and sliced almonds provide magnesium and vitamin E, and can even help to lower blood pressure. The apples are rich in antioxidants and flavonoids. The ribs of celery are loaded with vitamin C and fiber, supporting digestion.

Dates in a Celery Salad?

Dates fill you with B vitamins, selenium, and potassium. These help to fight oxidative stress, regulate blood sugar, and regulate your heartbeat.

What kind of apples work best in this fruit salad?

Celery on its own is tart but combines well with sweet flavors in crisp salads. For example, when I make celery juice, I like to add apples and lemon in there, too. So for this salad apples will add a good flavor for sure. But the type of apple really depends on your taste:

A medium red apple is considerably crunchy but doesn’t deliver best on sweet flavor.

Fuji apples are both sweet and juicy, and they make a great choice if you enjoy them often or keep them on hand.

A honeycrisp apple can be sweet and tart, making it a perfect option for this apple salad recipe if you don’t want the tartness of granny smith apples (green apple) in the salad.

Gala apples will give you the crunch, sweetness, and tartness that goes best with celery.

My personal recommendation would be to use whatever apple suits your taste or is local in your area. This great side dish salad tastes amazing with any apple choice!

Wash and trim the celery stalks. Slice into 1/8th to 1/4-inch half-moons crosswise. Add to a large bowl.

Core and slice the apples, then add them to the bowl.

Pit the dates and chop into small pieces.

Tahini Dressing

For the dressing mix combine all of the ingredients in a small bowl, adding 1 tbsp of hot water. The water will help to make the dressing smooth.
