Almond isn’t in too many baked treats. I’ve tried Italian almond cookies and biscotti, and they inspired me to make the easiest cookies I’ve tried. These almond cookies are the best thing to pair with a cup of coffee or a cup of tea. The bitterness of these drinks pairs well with gently nutty flavors like almond. I love putting lots of almond flavor into these cookies, making the dip into my coffee the most flavorful. The almond slivers on top add a bit of crunch and of course, more tasty almond flavor! You don’t need to make a special trip to the grocery store or buy almond extract for this almond cookie recipe. The soft almond flavor comes from almond flour and almonds. I think the best part of these cookies is that little bit of crunch you feel in every bite. These are thin cookies so they’re perfect to dip and are easy to store, too. The beauty of this recipe is that you don’t have to roll cookie balls or shape dough when laying out the cookie dough onto the baking tray. This recipe makes flat cookies that bake with a soft center. Fewer steps and more flavor make a better and easy recipe!

Almond flour of course to start off the almond flavor base! It’s naturally the main ingredient. Eggs to combine these cookies and make them soft. Sugar for that touch of sweetness that make them a perfect snack. All-purpose flour to keep this easy dessert together. Almonds for the topping, you can get sliced almonds (or chop up whole almonds) and add them on top right before you bake!

Ingredients
- ⅛ cup almond flour
- 3 eggs
- 4 Tbsp granulated sugar
- ⅓ cup white flour
- ½ cup almonds sliced, for topping
Instructions
- Preheat the oven to 355°F.
- Separate 3 large eggs from whites and egg yolks and place them in separate bowls.
- Add 4 Tablespoons of sugar to the yolks and beat with a mixer on high speed until fluffy.
- Sift 1/2 cup almond flour to the egg yolks and sugar and mix . Give a good mix. Add 1/3 cup white flour to the same bowl and mix again until it forms into batter.
- Beat egg whites on high speed until the mixture is light and fluffy (about 5 minutes).
- Add the beaten egg whites to the batter bowl and mix carefully. The batter must be somewhat liquid but not too runny.
- Spoon the batter onto a cookie tray lined with parchment paper. Leave space between each cookie. Sprinkle with almond slices.
- Bake for 15-25 minutes at 355°F. For softer cookies, take them out at 15 minutes. The longer you bake, the crunchier they become.
