Why I Love this Quick Brunch Casserole
To make this casserole, all you have to do is combine all of the ingredients, put them into a dish, and bake! It just couldn’t get easier. The prep time is just 2 minutes, and it’s great the next day as well. The cooking time is 30-35 minutes, and when it’s done it gives a taste of home.
While it may be called a farmer cheese casserole for this recipe, in the households of Eastern Europe it’s more like a cheesecake. Cheesecakes in Europe aren’t as sweet as American cheesecakes.
Key Ingredients
Farmer’s cheese is a great base to start this sweet recipe. You can use homemade farmer’s cheese if you’d like.
Eggs: Large.
Cream of wheat: From the 5-minute box will work.
Sour cream: Makes up some more of the rich ingredients.
Sugar: sweetens it up. You will need just a little bit, 3 Tablespoons, use fine.
Vanilla adds flavor to this farmer’s cheese recipe, but you can opt it out. I use dry vanilla.

Expert Tips
- Don’t substitute farmer’s cheese for any other cheese.
- Farmer’s cheese casserole is best served warm with fresh fruit jam.
- Check on the casserole to make sure it doesn’t burn.
- For a thicker casserole use a smaller oven-safe dish.
- Use high-quality farmer’s cheese for the best taste and texture. Homemade farmer’s cheese is a great option, but if you’re using store-bought, make sure to choose one with a creamy and smooth texture.
- If you prefer a sweeter casserole, you can increase the sugar amount to 4 or 5 Tablespoons. However, be careful not to make the casserole too sweet. This can overpower the delicate flavor of the farmer’s cheese.
Recipe FAQs
Ricotta cheese is not the same as farmer’s cheese, but do have the similar flavor and texture, however ricotta cheese is a bit sweeter in taste. It can be substituted for this recipe.
Although cottage cheese is similar to farmers cheese, for this recipes it’s not a good idea to substitute due to the texture of cottage cheese.

This recipe looks tasty, and I plan on trying it with oat flour or coconut flour so it will be gluten free. The cream of wheat means it isn’t gluten free, so you should remove that label or give a good gluten free alternate in the recipe.
