Easy Summer Soup

It sure has been a busy summer! Things have been fairly busy, and since summer is short, I have decided to spend more time with my kids rather than working on my site. I even got all their school supplies and clothes all ready and neatly organized.

Our summer this year was not as hot as some other years, but we got at least a few hot days and we sure used them with pool time and boat rides. Two of my kids learned to swim, so for me, that was a proud mama moment. During the colder, even rainy summer days I cooked up a soup.

This tomato soup was one of them, and it was easy to prepare. Tomatoes are rich in vitamins A, C, K, folate and potassium. It is quite filling and satisfying soup. If you love tomatoes, you will love this tomato soup!

This classic comfort food is one of my favorite soups. Ripe tomatoes, the perfect amount of salt, and the flavor of onion always makes up a flavorful tomato soup.

Warm comfort food may not be what you imagine in the summer, but sometimes rainy days take over and we’re reminded of the fall and winter season. When I miss the chill, an easy recipe like this one with simple ingredients brings me back to cozy days by the fire.

Good tomato soup always has Roma tomatoes (or plum tomatoes if you like), a good amount of parmesan cheese, and rich chicken broth. Grilled cheese sandwiches pair so well to make a classic childhood meal. I never understood as a kid how easy it is to put together that comfort meal. Especially when it’s this healthy tomato soup recipe!

Secret ingredient

The best tomato soup has a secret ingredient, and I’ll uncover my secret just for you: onion! It might seem like a small addition, but an onion does a lot in bringing out the tomato flavor by adding it to the beginning of the recipe with the garlic and olive oil!

Canned soup has nothing on this homemade tomato soup recipe. The best way to enjoy a soup is one that’s made with love at home and has the perfect addition of fresh herbs on top. Whether you like dill or fresh parsley, these herbs always add the best flavor. This creamy soup is one of the simplest and lightest soup recipes you’ll ever enjoy!

Here’s what you’ll need to make the perfect soup:

Chicken broth is the rich base to this soup. If you like vegetable broth, you can use that as well.

Fresh tomatoes, whole and peeled. You can get canned tomatoes if you like. Whole tomatoes are rich in lycopene and vitamin B.

Garlic is rich in antioxidants and helps to fight inflammation. It makes a very flavorful addition to this easy tomato soup recipe.

Onion adds the perfect flavor in this soup without overpowering the rest of the flavors. It also helps to fight cancers.

Olive oil starts this recipe off to saute with the onion and garlic. Vitamin E and A are in olive oil.

Fresh dill or parsley are rich in vitamin K or and vitamin A.

Along with those ingredients, you will need flour, kosher salt, black pepper, and croutons (for the topping). Also, parmesan cheese is a tasty garnish!

How do I make a comforting tomato soup?

Steps

In a medium size soup pot, heat up 3 Tablespoons of olive oil.

Add onion and garlic, then sear until slightly golden-brown.

Add 2 Tablespoons of flour and stir to coat the onion and garlic.

Add in 3 cups of chicken broth and tomatoes.

Bring to a boil and add salt and pepper to taste.
