What is capellini pasta?
Capellini is a very thin variety of Italian pasta. Angel hair pasta is even thinner, but can be used instead of capellini. For best results, cook the pasta according to the package. Make sure to not over boil the pasta in salted water, so you don’t end up having nasty-tasting and soggy noodles.
What can I substitute shrimp for?
While this is a dish recipe for pasta and shrimp, you can skip the shrimp or substitute it for mushrooms, lobster or spinach. The taste of the noodles should not change, but I find the light buttery sauce stands more out with a low calorie, light protein, like shrimp.
How to make the white wine sauce for pasta?
Instead of going out and buying ready-made pasta sauce in a jar with a long shelf life, try making your own! It’s easy.
To make the white wine sauce you will need olive oil, onion, garlic, and white wine. For a little creamy part add some shredded parmesan, and salt and pepper to taste.
Steps
Cook pasta per instructions on the box. It take a few minute for capellini pasta to cook in boiled salted water, so don’t over boil it. When pasta is ready, reserve 1/4 cup of pasta water. Then drain the rest of the pasta. Put pasta back into the pot and stir in the reserved 1/4 cup of water to loosen the pasta.
While the water boils and the pasta cooks, heat up a skillet for shrimp. Melt 1 Tablespoon of unsalted butter. Add in shrimp, salt, and paprika. Give it a good stir. Sear the shrimp till bought sides are cooked (about 2 minutes) Take shrimp out.
In the same skillet, on medium heat add in olive oil and thinly chopped onion. Cook until the onion is soft and clear (4-5 minutes).
Add in minced garlic, give it about thirty seconds for the flavors to come together. Then add in juice from 1/2 a lemon.
Then stir in white wine.
Then parmesan cheese.
Add chopped fresh parsley.
Add a pinch of salt. Turn off heat.
Combine shrimp to pasta and the white wine sauce.
