I love summer for a number of reasons, but having fresh summer berries on hand has got to be way up there on the list. They’re just so versatile! Eat them as a snack, turn them into a refreshing smoothie, or bake them into something special, berries are in a league of their own.
So when I have fresh, juicy blueberries at home, my mind starts coming up with dozens of ways to use them. And a blueberry breakfast casserole always takes priority. I love it. My family loves it. I’m sure my neighbors even love it (the smell, at least, because it is irresistible).
This breakfast casserole screams summer. It makes a wonderful statement at a brunch party. You will be asked for the recipe, over and over. And someone will definitely insist on you bringing it to the next gathering. Consider yourself warned.
This is no ordinary breakfast bake. Why?
There’s no flour. Not even a pinch. Instead, you use a cream of wheat for a unique flavor.
A whopping 1 pound of ricotta cheese (or farmer’s cheese) goes into this. It won’t taste cheesy though, promise. The ricotta adds height, fluff, and moisture into the casserole.
1 whole cup of fresh blueberries. Yes, please!
If all of the above wasn’t convincing enough, let me tell you something: this dish is so easy to make! Just a few minutes to make the batter, and into the oven, it goes for 35 minutes. You don’t even need a long list of ingredients for this.
You’d be doing yourself a disservice if you don’t try making this at home. It’s so delicious and ridiculously easy from start to finish.

- sour cream
- sugar
- cream of wheat
- vanilla extract

Steps
Turn oven on to 350F.
Add all ingredients together, except for blueberries. (2 Tablespoons of sour cream, 2 Tablespoons of cream of wheat, 1/2 teaspoon of vanilla extract, 2 large eggs, 3 Tablespoons of sugar, and 1 pound of farmers’ cheese).
Beat together with a mixer until well blended (about 3 minutes).
Fold in 1 cup of fresh blueberries.
Butter an oven-safe tart or pie dish and put the mix in the dish.
Bake for 35 minutes.
Let it cool down 10 minutes.
