Peach Brie Pastry Tarts

- parchment paper

- 2 sheets puff pastry, defrosted at room temperature for 40 minutes
- 6 oz brie cheese
- 2 tsp fresh thyme
- 2 peaches, thinly sliced into wedges
- 1 egg
- honey, for serving
Instructions
- Thaw the puff pastry and cut into 8 squares.2 sheets puff pastry,
