How to Make Vegan Sweet Potato Patties (Gluten Free)
Step 1: Cook the quinoa base.
In a small saucepan combine the quinoa with ⅔ cups of water. Bring to a boil over medium-high heat, then reduce the heat and simmer, covered for about 12 minutes. Remove from the heat and let it stand covered for 10 more minutes.
Step 2: Mash the sweet potatoes
Peel the skin from sweet potatoes and place in a large mixing bowl along with the beans. Use a potato masher to mash and mix them really well.
Step 3: Combine all of the ingredients
Add the rest of the ingredients and cooked quinoa. Let the mixture stand for 15 min, the oatmeal will absorb the moisture and make the mixture thicker.
Steps 4 & 5: Make the patties and cook them
Shape the burgers ½ cup of the mixture into burger patties, about 4 inches in diameter.
Fry the patties on a skillet with olive oil for 3-4 minutes on each side or until golden brown.
