Not only does chicken noodle soup taste delicious – it also has so many benefits that help boost your immune system and nourish your body! It’s perfect to slurp up when you’re sick and looking for food as medicine or just when you want something warm and cozy on a cold evening.

Benefits of Chicken Noodle Soup

  • Chicken fills you up and soup is easier to digest than many foods, so it’s only beneficial for your body. The chicken also is linked to higher levels of serotonin, the “feel-good” hormone. It also improves brain function and helps to build muscles.
  • I like to add potatoes to this soup for the fiber and extra heartiness.
  • Carrots are full of beta-carotene and add sweetness to the savory soup.
  • Onions have antioxidants that fight inflammation and reduce cholesterol levels.
  • Celery helps to treat constipation. Also, it can reduce levels of stress hormones and also fight inflammation.

Key Ingredients

classic chicken noodle soup ingredients- potatoes, water, carrots, pepper, salt, parsley flakes, turmeric, chicken, pasta noodles, onion, and celery.

This is the best chicken noodle soup recipe from scratch, and thankfully you will likely already have most of the ingredients. If not, a quick trip to the produce section will get you well-stocked for a big batch of soup!

  • Chicken: I like to mix it up and use thighs and some chicken breast pieces. You could also use leftover chicken, you will just want to add it later in the recipe since it doesn’t have to cook through.
  • Onion: This ingredient adds tons of flavor to the water. We use a whole onion in this recipe and then remove it, but you’re still getting all the nutrition from it. If you’d like to chop up your onion and keep it in the soup – feel free!
  • Potatoes: Yup, I add potatoes in here to make it truly the best chicken noodle soup recipe.
  • Carrots: Carrots make the soup shine! They add flavor and they are good for your health.
  • Celery: You can’t have chicken noodle soup without celery!
  • Noodles: Add your favorite noodles. I personally suggest adding egg noodles.
  • Herbs: I use parsley, but dill will work too. Herbs add an extra depth of flavor.
  • Finally, you will need salt and pepper.

TIP:  I add a pinch of turmeric spice for more flavor and color to the soup.

How to Make Homemade Chicken Noodle Soup

Step 1: Cook Chicken and Start Broth

Cut your chicken into pieces, put it in a large pot. Pour in the water and throw in the onion to cook together.

Step 2: Boil

Bring the chicken and onion mixture to a boil, and then take off the foam that has gathered on the top. Reduce the heat and let it cook on low for about 40 minutes.

Step 3: Remove Onion

After 40 minutes of simmering on a low heat, take out the onion; you don’t need it anymore, as we used it just to flavor our bullion.

Step 4: Add Vegetables

Peel and wash your vegetables. Cut them into slices and add them into the broth. Add salt and pepper. Then, close the lid and let everything cook for about 15 minutes.

Step 5: Add Noodles

In 15 minutes, add the egg noodles, boil everything for one more minute, and then remove the pot from the heat.

(If you’re using a different kind of pasta, you would have to add it earlier as it might take longer to cook).

Step 6: Herbs

Add your preferred herbs and parsley and let it stand for 10 minutes before serving. Add in the turmeric (optional), give it a good stir, and enjoy.

Recipe FAQs

What gives chicken noodle soup the most flavor?

Everything that’s in it! The beauty of soup is that everything works together to create the flavor. All of the vegetables, spices, and herbs complement each other and meld into a delicious and nourishing soup! You can also add things like garlic, onion powder, or bay leaves if you’d like.

What’s the secret to making good soup?

The secret is putting the ingredients you love in it. For example, in this soup, I added potatoes because they’re filling and add so much texture (and delicious flavor) to the soup. But that’s me! If you don’t like potatoes and would rather add something else then you should go for it.

Can I freeze this soup?

Yes! Pop it in an airtight container and freeze it, but I would recommend freezing it without the noodles. Then, defrost your soup serving and add the noodles as you’re reheating it so they don’t get mushy.

How to make a thick broth for chicken noodle soup?

This recipe is a little more brothy, but if you want to make a creamy chicken noodle soup with a thicker base, you can easily make a slurry with equal parts cornstarch and water. Then, simply stir it into your soup!

Should I add an acid to my homemade chicken noodle soup?

You can add an acid to your chicken noodle soup if you’d like! I tend to lean towards a spritz of lemon juice, but you can also use apple cider vinegar or white wine vinegar. The acid helps break down some of the collagen from the meat.
