Tender Breaded Chicken in the Oven on Skewers

Whenever I pass by a Mediterranean or Middle Eastern restaurant, I almost always have to order a plate of meat skewers. I love the perfectly charred flavor, the tender meat, and the beautiful melody of spices.
But the problem with that is I’m not always near a place where I can buy fresh, delicious kebabs. And to be honest, take-out orders can be hit or miss as well. So instead of always bringing them home, I’ve tried making them. It’s a five-star rating.
This breaded chicken recipe is from my mom’s cookbook and was one of our favorite chicken dishes growing up. She would make these chicken skewers for us for busy weeknights after work. But making the chicken on a stick is always a hit at big parties as finger foods.
Ingredients for the Breaded Chicken in the Oven:
- One lb of boneless skinless chicken thighs cut into cube size pieces
- ½ tsp black pepper
- ½ tsp salt
- Two large eggs
- One garlic clove
- 3 Tbsp olive oil
- 1 cup bread crumbs
- A pinch of chicken seasoning (I like to use Trader Joe’s seasoning blend)
Prep Chicken Skewers for the Oven
- Start by soaking the skewers in water.
- Add minced garlic and water into an oven sheet, then place a rack on top.
- Then in a small bowl, combine salt and black pepper and a pinch of chicken seasoning. Add chicken pieces into the bowl and let the chicken marinade.
- In a shallow bowl or plate, whisk eggs, and in a separate dish, add in breadcrumbs.
- Heat olive oil on medium-high heat in a pan.
- Put chicken pieces on skewers.
- Dredge in whisked eggs and then in breadcrumbs.
- Add chicken to the pan to get a golden brown color.
- Take it out and place it on the wire rack of the oven sheet.
How Long to Cook Chicken Skewers in the oven?
Bake chicken skewers at 350F covered with foil for 30 minutes in the oven.
Notes for Making Bread Chicken Skewer Recipe
- Cut the chicken thighs into thin pieces instead of cubes. Chicken pieces should not be large sizes.
- Breaded chicken on skewers reheats well the next day. Add some olive oil into a pan on medium heat, and heat the chicken skewers; this keeps the chicken juicy and crispy.
- If you don’t have seasoning on hand, you can skip that step in the marinade ingredients; instead, add a pinch more salt and black pepper.
- Soaking the wooden skewers in water is a must unless using metal skewers.
- Serve a big salad with this chicken recipe to make a full, healthy meal.
- You can use gluten-free breadcrumbs for the bread crumb coating.
- Chicken breasts can be a substitute for chicken thighs in this recipe.
- Cover the whole oven baking sheet with aluminum foil.
Steps to Cook Chicken Skewers in the Oven?

Ingredients
- 1 lb chicken thighs, cut into 1-2 inch pieces
- ½ tsp black pepper
- ½ tsp salt
- 2 large eggs
- 1 clove garlic, minced
- 3 Tbsp olive oil
- 1 cup bread crumbs
- Trader Joe's seasoning, optional
Instructions
- Preheat oven to 350F.
- Take a plate or a cup and soak your skewers in water.
- Mince 1 clove of garlic and combine with 1/2 cup of water. Pour into an oven safe dish.
- In a small bowl combine 1/2 teaspoon of pepper and 1/2 teaspoon of salt. You could also add a pinch of your favorite chicken seasoning.
- Cut 1 pound of chicken thighs into cube size pieces, add into the salt and pepper, and mix until all of the meat is seasoned.
- In one plate whisk 2 large eggs.
- In another plate put in 1 cup of breadcrumbs.
- Heat up 3 Tablespoons of olive oil in a pan.
- Put meat on skewers.
- Dredge in whisked eggs.
- After eggs, dredge the chicken in the breadcrumbs.
- Add to the chicken skewers into the heated pan with olive oil. This part is just for the color of the chicken shish kebabs. Do not cook them through.
- After chicken has gotten the golden-brown color, place into the oven dish in which you added the garlic and water.
- Cover with foil and bake for 30 minutes.
