Chicken and cheese roll: easy to make and simple ingredients on hand.
Have you ever been in a rut when it comes to what to cook? Ever completely blank out in the middle of the week and had no idea what to whip up for lunch? Or as a side? Been there, done that. In fact, I was just there this past week. I had absolutely no idea what to cook alongside my entree and then it hit me. I have ground chicken thighs in the fridge. That’s it: I could make a chicken and cheese roll. And that’s exactly what I did. It made the perfect addition to dinner and left us all fulfilled yet somehow wanting for more. I had everything else for it at home too – and that’s always a plus.

What’s Baked Cheese and Chicken roll anyway?
Think of a swiss roll. But with chicken. A chicken roulade is ground chicken that’s rolled within a pastry. For this recipe, however, I’ve used ground chicken as the filling and baked shredded cheese as the “wrap.”
You spread the chicken mixture onto the “sheet” of cheese and carefully roll into a log. Bake, slice and serve.

Seriously, when I see a chicken and cheese roll being served as an app, I’m excited to see what dinner would be like. But then again, I’d probably be pretty content with a few chicken cheese rolls on my plate, if that’s the only thing I had.
These things are good.
Here’s the thing though. Outside of Russian cuisine, not many people are too familiar with this. And I want to share this recipe with you. After all, I can’t be selfish and keep this all to myself. It simply wouldn’t be fair.
Budge and Kid Friendly Easy Dinner Idea
There are simple ingredients, not expensive and the dish is kid friendly (cheese and chicken= kids kinda food)
- I can count the number of ingredients that go in this dish on one hand (minus salt and pepper). Chicken, eggs, mayo, cheese. Easy peasy.
- The cheese is double baked. Oh my gosh, yes! The shredded cheese is first baked solo on a cookie sheet. When it forms together and becomes one whole piece, it gets baked again with the chicken mixture rolled into it.
- The presentation! These rolls look so good and are perfect to make for parties!
- It’s versatile. I kept this pretty simple and seasoned my chicken with salt and pepper. The whole family can enjoy it. But if I’m feeling more adventurous, I’ll maybe add some heat. Or maybe scallions. Perhaps some chopped veggies to mix into the ground chicken.

What goes into this chicken and cheese roulade?
I’ve kept it pretty simple and only added mayonnaise, salt, and pepper. You could add more if you’d like. Spinach, garlic, or feta cheese would all work very well here, too.
The layer of cheese consists of mixed shredded cheese, mayonnaise, and eggs. That gets combined and baked for an extra special texture.

Easy Kid-Friendly Baked Chicken and Cheese Roulade
Equipment
- bowl
- parchment paper
- Meat grinder
Ingredients
For the cheese:
- 2 lb cheese, shredded, a mix of white & yellow cheese
- 6 Tbsp mayonnaise
- 6 large eggs
For the chicken:
- 1 lb chicken thighs, ground
- 2 eggs
- 2 tsp black pepper
- ½ tsp salt
Instructions
- Preheat oven to 350F.
- In a bowl mix 2 pound of shredded cheese, mayonnaise, and 6 large eggs.2 lb cheese,, 6 Tbsp mayonnaise, 6 large eggs
- Mix together 2 pounds of ground chicken, 3 Tablespoons mayonnaise, 2 eggs, a pinch of salt, and 1 teaspoon of black pepper. Set aside.6 Tbsp mayonnaise, 1 lb chicken thighs,, 2 tsp black pepper, ½ tsp salt, 2 eggs
- On a cookie sheet, lay out foil. Spray well with cooking oil so the cheese doesn’t stick. Spread the cheese mix onto the foil. Bake the cheese for 15 minutes until lightly browned.
- After the cheese has baked, turn the oven sheet upside-down onto parchment paper. Peel off the foil paper.
- Spread the chicken mix on top of the baked cheese.
- Roll the layers the long way into a roll. Cover with foil. Bake 30-35 minutes.
- Remove from oven. Let cool for 10-15 minutes before slicing.
