Tender Breaded Chicken in the Oven on Skewers

Chicken kebabs are easily made and so delicious. It's a kids favorite and can be cooked ahead of time for busy lunches.

  • Oven-safe dish
  • small bowl
  • whisk

Ingredients

  • 1 lb chicken thighs, cut into 1-2 inch pieces
  • ½ cup water
  • ½ tsp black pepper
  • ½ tsp salt
  • 2 large eggs
  • 1 clove garlic, minced
  • 3 Tbsp olive oil
  • 1 cup bread crumbs
  • Trader Joe's seasoning, optional

Instructions

  • Preheat oven to 350F.
  • Take a plate or a cup and soak your skewers in water.

  • Mince garlic and combine with water. Pour into an oven safe dish.

  • In a small bowl combine salt and pepper. You could also add a pinch of your favorite chicken seasoning.

  • Cut chicken thighs into cube size pieces. Mix them into the salt and pepper until you have seasoned all the meat.

  • In one plate whisk the eggs.

  • In another plate put in the breadcrumbs.

  • Heat olive oil in a pan.

  • Thread the meat onto the skewers.

  • Dredge in whisked eggs.

  • After eggs, dredge the chicken in the breadcrumbs.

  • Add the chicken skewers into the heated pan with olive oil. This part is just for the color of the chicken shish kebabs. Do not cook them through.

  • Once the chicken is golden-brown, put it in the oven dish with garlic and water.

  • Cover with foil and bake for 30 minutes.

Notes

  • To prepare ahead of time, do all the steps until cooking in the oven. 
  • Reheat on a pan, medium-low heat with a little bit of light olive oil.
