Roasted Okra with Simple Dip

Go ahead and skip the fried okra next time. Roast them in the oven instead for delicious flavor and an incredible texture. This roasted okra recipe is easy to make and scrumptious to eat!

Okra:

  • 1 lb okra, rinsed
  • 1 Tbsp olive oil
  • 1 tsp curry
  • ½ tsp garlic powder
  • ¼ tsp sea salt

Dip:

  • 1 garlic clove, minced
  • ¼ tsp salt
  • ¼ cup plain yogurt
  • ground pepper, to taste

Instructions

  • Preheat oven to 350F.
  • Cut away the stems in okra. Then cut in half, lengthwise

  • Place okra in a large bowl, add curry powder, sea salt, garlic powder and olive oil. Toss to coat okra evenly in spices.

  • Place okra on a baking sheet in a single layer.

  • Roast in the oven for 20-25 minutes. It's ready when lightly browned and tender.

  • While okra is roasting, prepare the sauce, combining all ingredients in a small bowl.

Notes

    • You can substitute the plain yogurt with plain Greek yogurt or dip the okra in ranch dressing.
