Instructions
In a large pot, heat up olive oil.
2 Tbsp extra virgin olive oil
Add the lean ground beef and a pinch of salt to the pot. Sauté for 10 minutes, stirring occasionally.

Add the onion. Continue sautéing for another 5 minutes.
½ large yellow onion,
Add garlic and canned diced tomatoes (with juice). Add in frozen vegetables, then the red kidney beans. Stir the mix all together.
14 oz tomatoes,,

10 oz frozen mixed vegetables,,
14 oz red kidney beans,
Add in in the package of taco seasoning (⅓ cup).
1 package taco seasoning,
Pour in vegetable broth.

Salt to taste.
