Mix ground chicken, eggs, rice, salt, and black pepper.

Fill a large pot with water and bring to a boil.

Make balls from the chicken mix and drop into the boiling water. Cook for 10 minutes.
While the meatballs are cooking, peel and cut the potatoes into small pieces.

Take the chicken meatballs out and rest them on a pan.
Strain water from the chicken into a clean pot. Add potatoes into the water from the chicken and boil until soft.
Meanwhile, add extra virgin olive oil into the pan with meatballs.

Chop the onion and grate the carrot. Add to the pan with meatballs.
1 yellow onion,, 1 medium carrot,
Sauté for 5 minutes, then add meatballs to cooked potatoes.
Add drained garbanzo beans to the pot. Add fresh chopped dill, then salt and pepper to taste.
1 can organic garbanzo beans,
Bring the soup to a boil, then enjoy!
Notes
Rather than making the meatballs ahead of time, opt to make this recipe all at once - it's best to cook and eat the meatballs in the soup while they're fresh!
