Add water to a small pot and add in uncooked rice. Bring to a boil, turn the heat down to lowest, and cover with a lid. Cook until water is gone, then fluff with a fork.
In a small skillet, heat up olive oil and add in sliced bell peppers and sauté for 3 minutes.
Combine avocado, fajita seasoning, lemon juice, salt, tomato, and red onion.
Place rice into bowls then top with seared bell peppers, guac, corn, beans, cilantro and a sprinkle of cheese.
