Tomato Galette Recipe with Olive Oil & Fresh Thyme

First, gather the ingredients you'll need:

For the dough:

flour salt baking soda water olive oil apple vinegar

For the filling:

tomato slices goat cheese italian seasoning fresh thyme salt olive oil egg

Combine the dough ingredients in a bowl. Mix with your hands, knead it and then cover and set aside for 30 mins.

Roll out the dough and then spread goat cheese in the center and sprinkle with Italian seasoning. Leave about 2 inch border.

Slice tomatoes and arrange over the cheese. Season with salt and pepper. Drizzle with olive oil. Sprinkle with fresh thyme.

Bring the edges of the dough over the filling and overlap to create a border. Brush with the whisked egg and bake!

To avoid over-browning the crust and possibly burning the galette, bake it in the middle not the bottom or top of the hot oven.
