Let's Make Green Herb Soup with Sorrel

Sorrel which is also known as spinach dock is a vibrant, leafy green vegetable that is complex and delicious. It's known for its sour, tart taste and lemony flavor. Find it Whole Foods stores and the Farmer’s market.

Prepare the chicken stock: Fill up a pot with water and add in the chicken and salt and boil for 30 minutes. Once done, remove the chicken from the pot.

Add in the chopped potatoes to the pot and boil until soft.

In a separate saucepan, boil the eggs, then remove them from the pot. Let them cool before peeling and chopping.

In a skillet, heat olive oil on medium heat then, add the white part of the green onions. Sauté for about 2 minutes until just when it begins to color.

To the soup pot add- parsley, fresh dill, sorrel, hard-boiled eggs, green onion and the white sauteed onions. Bring the soup to a boil.

Add a little bit of salt to taste then serve in a soup bowl. Garnish with a dollop of sour cream!
