Simple Roasted Carrots with Sage Side Dish

These roasted carrots with sage are the perfect side dish to bring to your table. Healthy, easy, and absolutely delicious. What’s not to like?

  • 1 lb carrots
  • 1 Tbsp ghee, melted (or regular butter)
  • 1 Tbsp maple syrup
  • 3 large fresh sage leaves, finely chopped
  • tsp salt
  • black pepper, to taste

Instructions

  • Preheat the oven to 425F. Line baking sheet with parchment paper.
  • Wash and peel the carrot. Cut into ½ inch thick sticks. Very small carrots can be left whole or cut in two.

  • In a large bowl, combine melted ghee butter, maple syrup, sage, salt, and pepper.

    Seasonings and oil in a large white bowl.
  • Add carrots and massage to infuse the flavours.

  • Spread in a single layer on a baking sheet. Bake for 20 minutes, or until carrots are soft and caramelized.
    Spread out carrot pieces on parchment paper ready to bake.
  • If needed, sprinkle with more salt for serving.

Notes

  • Carrots can be marinade ahead of time for more flavor.
  • Peel the carrots. 
  • Use fresh sage.
