Classic Creamy Risotto

This delicious classic creamy risotto recipe is made with dry white wine, hot chicken broth, and freshly grated parmesan. Enjoy it as your main meal topped with mushrooms or steak, or as a mouthwatering side dish!

Ingredients

  • cup arborio rice
  • 2 tbsp olive oil
  • 1 medium onion, chopped
  • 1 tsp garlic powder
  • ½ cup dry white wine, pinot grigio or sauvignon blanc
  • 5 cups hot chicken broth
  • 1 tbsp butter
  • ½ cup grated parmesan + for serving
  • salt and pepper to taste

Instructions

  • Heat the olive oil in a large saucepan over medium heat. Saute onion, until the onion becomes translucent, about 3 minutes.

  • Add in the rice and garlic powder and cook over medium heat, stirring constantly, for 2  minutes, until grains start to get translucent on the edges.

  • Add the wine. Cook and stir until it's absorbed.

  • Add broth, 1 cup at a time, cooking and stirring until it's absorbed each time. This will take about 20 minutes. The rice should be tender but hold its shape.

  • When the rice is done, remove the pan from the heat and stir in the cheese and butter, and salt and pepper to taste. Stir until melted, then serve.

Notes

The arborio rice itself can absorb a lot of liquid without becoming mushy, so you’ll have a very high moisture content and therefore super tender rice. Additionally, arborio has a high starch content so when you add the stock and broth the starches will meld the mixture together perfectly.
