Combine butter and sugar in a stand mixer on low speed. You can also combine with a whisk.
8 Tbsp unsalted butter,, ½ cup sugar
Add eggs and beat the mixture with a mixer on medium speed until well combined.
2 large eggs
Add raisins and flour and mix well with a spatula or wooden spoon.
1 cup golden raisins, 1¾ cup flour
Spoon the cookie dough onto a tray lined with parchment paper.
Bake at 350°F for 20 minutes. All ready!
Notes
Although not necessary, soaking raisins before adding them to the batter will make them more flavorful and nicer. After all, they are dehydrated. This means all the moisture was removed by the sun, air, or mechanical equivalent, making them dry.
