Breakfast burritos!

eggs

avocado

flour tortillas

tomato

cream cheese

red onion

potatoes and  olive oil

ground sausage

Heat olive oil and cook sausage meat for 10 mins.  Stir occasionally then transfer to a bowl.

In the same skillet cook grated potatoes until golden brown. Transfer to a bowl.

In the same skillet cook scrambled eggs then set aside.

Spread cream cheese over in the center of the tortilla. Place eggs over cream cheese, then potatoes, meat and chopped veggies.

Fold the sides of the tortilla, then roll up burrito style. Heat up on a skillet, turning over until all the sides are golden brown.

Make these ahead of time! They easily reheat.
