Chicken Soup with Couscous and Vegetables

You will need a few ingredients: chicken thighs basil leaves olive oil pearl couscous yellow onion carrots  celery garlic lemon juice spinach fresh dill, chopped salt and pepper

Add water, chicken thighs, basil leaves, and salt to a large pot. Boil  over medium heat.

In a separate pot add olive oil, chopped onion and couscous. Cook for 5 mins, occasionally stirring.

Strain the chicken and then add the couscous, celery, carrot and garlic. Bring to a boil and then let it simmer until the couscous is cooked.

Chop the chicken and add it back to the pot.

Chop the fresh spinach and dill and add it to the pot of soup. Season with salt and pepper and bring it to a boil.

Serve right away! For leftovers, keep soup in the refrigerator in the soup pot with the lid on for up to 4 days.
