Baked Avocado Egg and Bacon

A fantastic dish for breakfast or brunch and doesn’t take much to prepare while offering a great deal of nutritional value.

Equipment

Ingredients

  • ½ Tbsp extra virgin olive oil
  • 1 large ripe avocado, sliced in half, pitted
  • 2 medium eggs
  • 1 small pinch salt
  • 1 small pinch ground black pepper
  • 1 slice turkey bacon, chopped
  • 1 scallion, chopped

Instructions

  • Preheat oven to 400F.
  • Spread extra-virgin olive oil on a small baking dish.
    ½ Tbsp extra virgin olive oil

  • Slice the avocados in half and remove the pit. Place avocado halves on baking sheet.

  • Crack an egg into each avocado half. (The whole egg may not fit, so discard some of the egg whites).
    2 medium eggs

  • Sprinkle salt, pepper, and bacon on top of both avocado and egg.

  • Bake for 15 minutes or until egg is cooked.

  • Garnish with chopped scallions and enjoy!

Notes

  • Feel free to swap out the turkey bacon for regular bacon.
  • You can add a sprinkle of cheese when you add the bacon! Use cheddar, mozzarella or cheese of your choice.
