Baked Avocado Egg and Bacon
A fantastic dish for breakfast or brunch and doesn’t take much to prepare while offering a great deal of nutritional value.

- ½ Tbsp extra virgin olive oil
- 1 large ripe avocado, sliced in half, pitted
- 2 medium eggs
- 1 small pinch salt
- 1 small pinch ground black pepper
- 1 slice turkey bacon, chopped
- 1 scallion, chopped
Preheat oven to 400F.
Spread extra-virgin olive oil on a small baking dish.
½ Tbsp extra virgin olive oil
Slice the avocados in half and remove the pit. Place avocado halves on baking sheet.
1 large ripe avocado,
Crack an egg into each avocado half. (The whole egg may not fit, so discard some of the egg whites).
2 medium eggs
Sprinkle salt, pepper, and bacon on top of both avocado and egg.

Bake for 15 minutes or until egg is cooked.
Garnish with chopped scallions and enjoy!

- Feel free to swap out the turkey bacon for regular bacon.
- You can add a sprinkle of cheese when you add the bacon! Use cheddar, mozzarella or cheese of your choice.
