Simple Make Ahead Chicken Skewers over Greens Salad
A salad like this chicken skewer with strawberries and greens. you can make prep ahead of time and enjoy after a long day.

Chicken Marinade
- 1 chicken breast, boneless & skinless, cut into strips
- 1 Tbsp tomato paste
- 1 clove garlic, minced
- 1 Tbsp mayonnaise
- ⅛ tsp salt
- ⅛ tsp ground black pepper
Salad
- ½ avocado, sliced
- 2 stalks asparagus, chopped
- 5 strawberries, sliced
- ½ cup mixed greens
- ¼ cup pecans
Salad Mix
- 2 Tbsp extra virgin olive oil
For the Chicken Marinade:
In a small bowl combine tomato paste, mayonnaise, salt, ground pepper, and garlic clove.

Cut chicken breast into strips. (As many as you like).

Mix marinade and chicken strips together. Let stand until ready to cook.
In a skillet heat up extra virgin olive oil. (If you want, you can put the marinated chicken on skewers. If you don't have skewers, that’s fine.) Cook chicken on all sides for 4 minutes. If your strips are thin you may only need 2-3 minutes.

For the Salad:
In a salad bowl, combine avocado, asparagus, sliced strawberries, mixed greens, and pecans. Cover and refrigerate until chicken is ready.

Add chicken to chopped vegetables and enjoy!
- You can use a meat thermometer to test for the doneness of the chicken. The chicken is cooked when the thermometer reads 165°F (74°C).
- For the best chicken kabobs, marinate the chicken for at least 2-3 hours or overnight. This allows the flavors of the spices to permeate the chicken and results in a juicier, more flavorful kabob.
