  • 9 Brussels sprouts, shredded
  • ¼ green cabbage, shredded
  • 2 heads green broccoli, chopped
  • 2 stems green kale, chopped
  • ½ cup pumpkin seeds
  • ½ cup dried cranberries

Simple Poppy Seed Dressing

  • 1 Tbsp poppy seeds
  • 1 cup mayonnaise
  • 1 pinch salt
  • Tbsp apple cider vinegar
  • 1 Tbsp cane sugar

Instructions

  • First make the poppy seed dressing by whisking all the ingredients together. (It needs to stand five minutes before serving. )

  • Combine all the vegetables together, then add the pumpkin seeds and dried cranberries.

Notes

  • You can make the dressing ahead of time and keep in the fridge in an airtight container for up to a week. 
  • The salad ingredients can be cut and covered, and kept in the fridge for up to 3 days without mixing with the dressing.
