- 9 Brussels sprouts, shredded
- ¼ green cabbage, shredded
- 2 heads green broccoli, chopped
- 2 stems green kale, chopped
- ½ cup pumpkin seeds
- ½ cup dried cranberries
Simple Poppy Seed Dressing
- 1 Tbsp poppy seeds
- 1 cup mayonnaise
- 1 pinch salt
- 2½ Tbsp apple cider vinegar
- 1 Tbsp cane sugar
First make the poppy seed dressing by whisking all the ingredients together. (It needs to stand five minutes before serving. )

Combine all the vegetables together, then add the pumpkin seeds and dried cranberries.

Mix with dressing.
- You can make the dressing ahead of time and keep in the fridge in an airtight container for up to a week.
- The salad ingredients can be cut and covered, and kept in the fridge for up to 3 days without mixing with the dressing.
