Sweet Potato Breakfast Skillet with Egg (under 30 Minutes)
Sweet Potato Egg Skillet can be served any time of day. Although sweet potatoes in this dish could be replaced with other kinds of potatoes, keep in mind the health benefits do change.

- 2 slices turkey bacon, chopped
- 1 sweet potato, chopped
- 2 Tbsp olive oil
- ½ yellow onion, chopped
- 1 red bell pepper, chopped
- 3 large eggs
- ½ tsp sea salt

Cook bacon in a large nonstick skillet over medium heat until edges begin to brown.

Add in olive oil and sweet potato; stir and cook until the potato is tender (7-8 minutes).

Add in onion, bell pepper, and salt; stir and cook for another 2 minutes.

Form 3-4 wells. Crack an egg into each well. Cover and cook until the egg whites and is just set but the yolks are still runny.

Add in fresh watercress and serve.
