- 2 Tbsp extra virgin olive oil
- 1 lb lean beef, ground
- ½ large yellow onion, chopped
- 14 oz tomatoes, diced
- 1 clove garlic, minced
- 10 oz frozen mixed vegetables, 1 bag
- 14 oz red kidney beans, 1 can
- 946 mL vegetable broth
- 1 package taco seasoning, ⅓ cup
- salt, to taste
In a large pot, heat up olive oil.
2 Tbsp extra virgin olive oil
Add the lean ground beef and a pinch of salt to the pot. Sauté for 10 minutes, stirring occasionally.

Add the onion. Continue sautéing for another 5 minutes.

Add garlic and canned diced tomatoes (with juice). Add in frozen vegetables, then the red kidney beans. Stir the mix all together.
