Ingredients

  • 2 Tbsp extra virgin olive oil
  • 1 lb lean beef, ground
  • ½ large yellow onion, chopped
  • 14 oz tomatoes, diced
  • 1 clove garlic, minced
  • 10 oz frozen mixed vegetables, 1 bag
  • 14 oz red kidney beans, 1 can
  • 946 mL vegetable broth
  • 1 package taco seasoning, ⅓ cup
  • salt, to taste

Instructions

  • In a large pot, heat up olive oil.
    2 Tbsp extra virgin olive oil
  • Add the lean ground beef and a pinch of salt to the pot. Sauté for 10 minutes, stirring occasionally.

  • Add the onion. Continue sautéing for another 5 minutes.
    ½ large yellow onion,
  • Add garlic and canned diced tomatoes (with juice). Add in frozen vegetables, then the red kidney beans. Stir the mix all together.

  • Add in in the package of taco seasoning (⅓ cup).

  • Pour in vegetable broth.
