Preheat oven to 350F. Spray or butter the cake pan (I used a 9" spring form pan).
Mix dry ingredients together except for sugar: nuts, baking powder, salt and flour.
2 cups pecan,, ½ tsp baking powder, ¼ tsp salt, ⅓ cup flour
Beat softened butter then add half of the sugar. Keep beating until creamy.
1 cup unsalted butter,, 1¼ cups sugar
Add in egg yolks one at a time and continue beating.
5 large eggs
With an electrical mixer, in a separate bowl, mix the egg whites with the rest of the sugar and vanilla extract, till white and fluffy.
Using a large spatula, fold in the fluffy egg whites into the butter batter.
5 large eggs, 2 tsp vanilla extract
With a spatula, add in the wet ingredients into the dry ingredients (nuts, flour and baking powder). Put into the greased pan.
Bake for 50-60 minutes or until toothpick comes out clean.
