Pecan Torte with Smooth Chocolate Glaze

This Pecan Torte with Chocolate Glaze is a perfectly textured cake made with chopped pecans, eggs, sugar, flour, and vanilla. Serve it with some fresh cream for an over-the-top taste.

Ingredients

  • 2 cups pecan, chopped
  • cup flour
  • ½ tsp baking powder
  • ¼ tsp salt
  • 1 cup unsalted butter, softned
  • cups sugar
  • 5 large eggs
  • 2 tsp vanilla extract

Chocolate Glaze

  • 5 oz dark choclate, or milk
  • ½ cup unsalted butter, softned
  • 2 Tbsp heavy cream
  • 1 tsp vanilla (optional)

Instructions

  • Preheat oven to 350F. Spray or butter the cake pan (I used a 9" spring form pan).
  • Mix dry ingredients together except for sugar: nuts, baking powder, salt and flour.

  • Beat softened butter then add half of the sugar. Keep beating until creamy.

  • Add in egg yolks one at a time and continue beating.

  • With an electrical mixer, in a separate bowl, mix the egg whites with the rest of the sugar and vanilla extract, till white and fluffy.

  • Using a large spatula, fold in the fluffy egg whites into the butter batter.

  • With a spatula, add in the wet ingredients into the dry ingredients (nuts, flour and baking powder). Put into the greased pan.

  • Bake for 50-60 minutes or until toothpick comes out clean.

For the chocolate glaze:

  • Over barely simmering pot of water, place a bowl on top and melt the chocolate.

  • Add in unsalted butter and melt.

  • Turn heat off and whisk in 1 tsp vanilla extract and heavy cream until glossy.

  • Pour the chocolate glaze over the cooled cake and it is ready to enjoy!

Notes

  • Make sure the torte is completely cooled down before pouring the chocolate glaze on. 
  • Torte can also be chilled in the fridge. 
  • Make sure to beat the egg whites till fluffy and stiff.
