Roasted Okra with Simple Dip

Okra:
- 1 lb okra, rinsed
- 1 Tbsp olive oil
- 1 tsp curry
- ½ tsp garlic powder
- ¼ tsp sea salt
Dip:
- 1 garlic clove, minced
- ¼ tsp salt
- ¼ cup plain yogurt
- ground pepper, to taste
Preheat oven to 350F.
Cut away the stems in okra. Then cut in half, lengthwise

Place okra in a large bowl, add curry powder, sea salt, garlic powder and olive oil. Toss to coat okra evenly in spices.

Place okra on a baking sheet in a single layer.
Roast in the oven for 20-25 minutes. It's ready when lightly browned and tender.
