Ingredients

  • 1 cup gluten free flour
  • 1 cup oat flour (make sure it is labeled gluten-free)
  • 1 stick unsalted butter, softened
  • 1 cup sugar
  • 1 egg
  • ½ tsp baking powder
  • ½ tsp baking soda
  • 1 tsp vanilla extract
  • ½ tsp salt

Instructions

  • Preheat the oven to 350 F. Line 2 baking sheets with parchment paper.
  • Mix all the dry ingredients – both types of flour, baking soda, baking powder, and salt.

  • In a separate bowl, beat the butter with sugar. Add egg and vanilla.

  • Make balls with your hands and flatten them slightly. Place them on a baking sheet, leaving some space between cookies.
