Celery and Apple Salad
A simple celery and apple salad with Almonds and Dates is all you need this spring. It may sound unusual, but the flavors come together so good.

- 3 stalks celery
- 2 small apples
- 4-5 dates
- ¼ cup almonds, toasted & sliced
Dressing
- 1 Tbsp tahini paste
- ½ lemon, juiced
- 1 Tbsp hot water
- 1⅛ Tbsp honey
Wash and trim the celery stalks. Slice into ⅛ to ¼-inch half-moons crosswise.

Core and slice the apples.

Pit the dates and chop into small pieces.
4-5 dates
For the dressing mix combine all ingredients, adding 1 Tbsp of hot water. The water will help to make the dressing smooth.

Combine salad ingredients together in a bowl and combine with tahini dressing.
