Celery and Apple Salad

A simple celery and apple salad with Almonds and Dates is all you need this spring. It may sound unusual, but the flavors come together so good.

Ingredients

  • 3 stalks celery
  • 2 small apples
  • 4-5 dates
  • ¼ cup almonds, toasted & sliced

Dressing

  • 1 Tbsp tahini paste
  • ½ lemon, juiced
  • 1 Tbsp hot water
  • 1⅛ Tbsp honey

Instructions

  • Wash and trim the celery stalks. Slice into ⅛ to ¼-inch half-moons crosswise.

  • Core and slice the apples.

  • Pit the dates and chop into small pieces.

  • For the dressing mix combine all ingredients, adding 1 Tbsp of hot water. The water will help to make the dressing smooth.

  • Combine salad ingredients together in a bowl and combine with tahini dressing.
