In a bowl, combine flour and baking soda with softened, unsalted butter. Incorporate well together until butter forms into small crumbs.
3 cups flour, 1 cup butter,, 1 tsp baking soda
To the butter and flour, add sour cream and sugar. Mix together.
1 cup sour cream, 1 tsp sugar
Add in egg yolks. Mix and toss the dough together until all is well incorporated. The dough will become soft and gentle.
2 egg yolks
Divide the dough into 3 equal parts. Shape each part into a round disk-like shape. Wrap each with plastic wrap and refrigerate for 30 minutes.
Meanwhile, prepare the filling by beating together egg whites and sugar.
2 egg whites, 2 cups sugar
Chop the walnuts. Stir the walnuts into the eggs and sugar.
3 cups walnuts,
Preheat oven to 350F.
Butter up an oven-safe pan, 8 X 12 inch ( If it is glass or ceramic, you don’t need to butter it up).
Take the dough out of refrigerator and roll it out gently for it to fit into your dish. (Use flour for the dough for it not to stick to your surface). Carefully transfer one rolled out dough into your pan.
Take half of the nut mix and spread it over the dough in the pan.
Add another rolled-out dough and spread the rest of the nut mixer over the dough. Cover it with the third rolled-out dough.
Cut into diamond shapes.
Whisk 1 egg yolk and brush over the top of the baklava. Add a nut to each piece.
1 egg yolk,, ½ cup whole walnuts
Put in oven for 45 minutes or until the top is golden color.
After taking the baklava out of the oven, cool it down completely before trying to take it out from the pan.
