Simple Avocado Salad Recipe with Tomatoes

  • 1 large ripe avocado, chopped
  • 1 small tomato, diced
  • cup cucumber, cubed
  • 1 Tbsp red onion, finely chopped
  • 2 Tbsp olive oil
  • salt, to taste
  • black pepper, to taste

Instructions

  • Slice the avocado in half, lengthwise. Using a tablespoon, scoop out each half of the insides of the avocado and chop it into bite-size pieces.

  • Dice tomato, cucumber, and red onion into equal size pieces and place all of the chopped ingredients in one bowl. Season with salt and pepper, drizzle with olive oil and mix carefully.

  • Spoon the salad into avocado halves and garnish with fresh parsley.

Notes

While the recipe calls for red onion, you can experiment with other onion varieties like white or shallots. Each type will bring its own unique flavor and aroma to the salad!
