Chicken with Mushrooms in Tomato Sauce
This easy dinner comes together in one large skillet and combines fresh tomatoes, mushrooms, chicken, and flavours of onion to make this nutritious and flavour dish.

chicken thighs,
boneless & skinless

extra virgin olive oil
½
yellow onion,
chopped

mushrooms,
sliced (any kind you like)

tomatoes,
diced

to taste

Instructions
Melt butter in a pan or a pot.
1 Tbsp unsalted butter
Cut any fat off the chicken thighs. Cut chicken into smaller pieces and combine with salt and black pepper.

Sauté chicken for 5 minutes. It should start to get that nice brown color.
Add extra virgin olive oil and the yellow onion. Sauté for 4 minutes, stirring occasionally.

Add in the sliced mushrooms and chopped tomatoes.
10 oz mushrooms,,
2 large tomatoes,
Sauté for 15 minutes on medium-low.
Stir it occasionally, then add salt and pepper to taste.

Cover pan, turn heat on lowest, and let it simmer for another 5 minutes.
