Easy Savory Chicken Crepes

Chicken stuffed crepes will have you melting your mouth for more! They are so flavorful and absolutely delicious served with sour cream!

Equipment

Ingredients

  • 2 cups milk, warm, I used organic whole milk
  • 1 cup flour
  • 1 large egg
  • 1 tsp baking soda or baking powder
  • ½ tsp salt
  • ½ Tbsp sugar
  • 2 tsp extra virgin olive oil

Chicken Filling

  • 2 cups chicken, cooked, I use thighs
  • ½ small onion, chopped
  • ½ Tbsp unsalted butter

Instructions

Make crepes

  • In a mixing bowl, add 1 cup of warm milk with flour. Whisk together till there are no clumps from the flour.

  • Add another cup of warm milk to the bowl.

  • Lightly beat the egg and add to the milk and flour. Add in salt, baking powder, sugar and extra virgin olive oil. Combine. Once finished, it will be runny.

  • Heat up a crepe pan on medium heat. Using a ladle make crepes one by one, turning it over to get each side browned up. (This process goes very quickly!)

Chicken Filling

  • Chop the onion and sauté with unsalted butter in a pan.

  • When onion begins to brown up, add in the cooked meat, add a pinch of salt/pepper. Sauté for a couple more minutes. Let it cool down.

  • In a grinder or food processor grind the meat filling.

  • Fill in the crepes.

  • Crepes with chicken are usually served with sour cream.
  • To reheat crepes, melt unsalted butter in a pan and brown up each side of the rolled crepes giving it a bit of a golden brown color.

Notes

  • Substitute baking soda to baking powder if you want.
  • Chicken can be substituted for beef or lamb. 
  • Serve crepes with sour cream or Greek yogurt.
