Low Carb Creamy Cauliflower and Vegetable Soup


Heat up olive oil then saute onion, carrots and celery until soft. Then, add in caulfilower and thyme. 

Add broth, salt, and pepper and bring to a boil. Then simmer for 20 mins or until all vegetables are soft.

Using a regular or an emersion blender, blend soup ingredients until smooth.

Serve with chopped parsley, extra salt, or a squeeze of lemon.
