Easy Watermelon and Cucumber Salad with Feta

A watermelon salad wasn’t something I ever thought I would make. I just usually like my watermelon plain without any additions such as vegetables or cheese. But after playing around with some ingredients, this salad came to be. I definitely enjoyed this combo more than I imagined, and my kids also liked it. Watermelon salad is one of those salads that you have got to try before saying no to because the flavors work so well together. This watermelon salad will go great with protein.
Keeping Watermelon and Cucumber Salad Fresh
Watermelon and Cucumber Salad is a refreshing summer combo. You could make it an hour or two ahead of time, but it’s really better fresh. Add in some mint, red onion, cheese and toss with a simple vinaigrette. It’s the perfect summer side dish to go along with a hamburger, chicken or even steak!
Here’s what you’ll need to make the salad:
- watermelon
- fresh mint
- red onion
- cucumber
- sheep’s cheese
And for the dressing:
- garlic
- red wine vinegar
- oregano
- salt

Easy Watermelon and Cucumber Salad with Feta
Equipment
- garlic press
- whisk
- mixing bowl
- mixing spoon
Ingredients
- ¼ medium watermeon, cubed
- ½ Tbsp fresh mint, chopped
- ¼ red onion, thinly sliced
- 1 cucumber, peeled & quartered
- 6 oz sheep cheese, cubed
- 1 clove garlic, minced
- 2 Tbsp red wine vinegar
- ¼ tsp oregano, dried
- salt, to taste
Instructions
- Combine all of the salad ingredients together.
- Whisk together vinaigrette ingredients and toss with salad. Enjoy fresh!
