Ok, so I bought too many apricots this week. You know when all year you don’t see apricot and then it appears in front of you first thing in the produce department. Like when you haven’t seen a friend for a long time. When you see them again you get all excited and want to catch up, this was apricots and me this week; been eating them every day.

I think that warm fruit salads are super underrated. Combining that sweet & warm fruit with a fresh burst of mint and creamy, cold feta is a delicacy that I hope you enjoy.

Turns out, apricots are good for many things. This bright orange fruit is full of so much vitamin C that it is beneficial for the skin. The antioxidants found in apricots slow the aging process and result in youthful looking skin. The natural sweetener in this salad, honey, is anti-bacterial and anti-fungal, meaning that it can kill bacteria and fungus. Ingredients

  • 6 apricots, chopped
  • 3 Tbsp honey
  • ½ cup water
  • 1 Tbsp feta cheese, crumbled
  • 1 stem fresh mint, chopped

Instructions

  • Bring 1/2 cup of water and 3 Tablespoons honey to a boil. On medium-low heat simmer for 5 minutes. Take off heat.
  • Slice 6 apricots and stir them into syrup, making sure each slice gets covered. Let stand for 10 minutes.
  • Place apricots on a serving plate (you may drain the extra syrup). Sprinkle 1 Tablespoon crumbled feta cheese and chopped fresh mint.
