Tomato and Kale Salad with Easy Miso Citrus Vinaigrette

Easy and quick, kale salad comes together with wonderful components and big flavors. The Citrus Miso Vinaigrette is refreshing and full of flavors, it complements the bitterness of the kale.

Miso is a seasoning made from soybeans. It benefits your body by giving it B vitamins and vitamins E and K. Since it’s fermented, it provides your gut with probiotics that support digestion.

Ingredients

  • 6 cups kale, de-stemmed, cut into ribbons
  • 3 cups cabbage, shredded
  • 2-3 cups tomatoes, seeded & chopped
  • ¼ cup red onion, thinly sliced

Easy Miso Citrus Vinaigrette

  • 4 Tbsp avocado oil, or olive oil
  • 3 Tbsp orange juice, freshly squeezed
  • 2 tsp lemon juice, fresh
  • 2 Tbsp light miso
  • 1 clove garlic, crushed
  • 1-2 tsp honey
  • tsp onion powder
  • ¼ tsp Dijon mustard
  • tsp sea salt
  • 1 pinch cayenne pepper

Instructions

  • Combine ingredients for dressing in a bowl and whisk to a smooth consistency. Set aside.
    4 Tbsp avocado oil,, 3 Tbsp orange juice,, 2 tsp lemon juice,, 2 Tbsp light miso, 1 clove garlic,, 1-2 tsp honey, 1½ tsp onion powder, ¼ tsp Dijon mustard, ⅛ tsp sea salt, 1 pinch cayenne pepper
  • Cut the kale and cabbage into thin strips and add to a large bowl with thinly sliced onions and chopped tomatoes.
    6 cups kale,, 3 cups cabbage,, ¼ cup red onion,, 2-3 cups tomatoes,
  • Toss the salad ingredients with dressing making sure to coat all ingredients.
  • Add salt, pepper, or cayenne to taste.
