Easy and Sweet Honeyed Quinoa Fruit Salad

I have a sweet tooth! Whenever I eat something savory, I feel like I need a bit of sweetness right after. It used to be candy or cakes, but after I started eating cleaner, I stopped baking. Especially now that the season is full of naturally sweet fruits, there is no need for cake.
After I started to incorporate much more fruit into my diet, I found that I don’t crave sugar as much as I used to. With this sweet quinoa fruit salad, you will get all the sweetness you desire for significantly fewer calories than cookies, candy, or cake.
The dressing to this simple quinoa salad is made of honey and lemon – two ingredients that when combined, add a delicious burst of flavor to the quinoa! It perfectly accentuates the fruit, and provides your body with antioxidants (in the honey) and vitamin C (in the lemon).
This salad contains a good source of protein in the quinoa. Besides that, the berries are good for keeping you mentally sharp. And on top of those benefits, mint is full of antioxidants.
What do I need to make this easy recipe?
Quinoa, which is full of fiber. It helps with blood sugar control.
Strawberries are a great source of vitamin C and potassium.
Blueberries are very nutritious, providing antioxidants for your body.
Blackberries are a strong source of vitamin K and manganese.
Along with those ingredients, you will need:
- fresh mint
- lemon
- honey

Equipment
- whisk
- small bowl
- mixing spoon
Ingredients
- ½ cup quinoa, cooked
- ½ lb strawberries
- ½ cup blueberries
- ½ cup blackberries
- 1 stem fresh mint
- ½ lemon
- 3 Tbsp honey
Instructions
- Cut strawberries into bite-size pieces and mix with 1/2 cup blueberries, 1/2 cup blackberries, 1/2 cup cooked quinoa, and chopped fresh mint.
- Sweet dressing: In a small bowl, whisk together juice from 1/2 lemon and 3 Tablespoons honey' mix with the fruit and quinoa.
