Since my kids are home all week (winter break!), I decided to make this split pea soup for lunch. As a child I ate it a lot. My kids liked that it didn’t have the onion directly in the soup, and they loved dipping toast into the soup. I would say it went pretty well, considering kids and peas are not always the best of friends. People have eaten split peas since prehistoric times. The fiber in split peas can help reduce your blood cholesterol level and make you feel fuller faster.

This delicious soup uses yellow split peas to put together a creamy and tasty dinner recipe that is best to have any time of the year. It is dairy free and has optional toast that you can enjoy it with. Also, this creamy homemade split pea soup requires no immersion blender to make it creamy or smooth! It’s all in the cooking process.

If the time of year calls for it, this soup is great to put into hot containers for kids to take to school. Also, this tasty recipe is a great make ahead soup for the week. My kids love it the next day after making just as much as they do when it’s freshly cooked. The large soup pot is emptied so quickly, I’m surprised when they ask for it again and again!

What are the ingredients in split pea soup?

Olive oil to saute the vegetables.

Yellow onion for flavor! It’s also rich in quercetin.

Carrots are rich in vitamin A and beta-carotene.

Water for the liquid portion.

Potatoes are a very filling addition to soups, especially in the winter. they can be found year round and go well with yellow peas.

Split peas are a source of protein. The yellow peas have a nice and mild flavor that goes well with the ingredients of this soup.

Salt for flavor!

Dill helps with digestion issues and infections. It’s a classic flavor addition into this classic split pea soup.

Ingredients

  • 2 Tbsp olive oil
  • ½ yellow onion, chopped
  • 1 carrot, grated
  • 10 cups water
  • 2 large potatoes, peeled & chopped
  • cup split peas, rinsed
  • 2 tsp salt, + more to taste
  • dill, to garnish
  • toast, optional

Instructions

  • In a skillet, heat up 2 Tablespoons of olive oil.
  • In a pot, add 10 cups of water. Bring to a boil.
  • Add in the chopped potato and 1 1/2 cups rinsed split peas.
  • Add 2 teaspoons of salt. Simmer on medium heat until the peas are cooked through. (This will take about an hour.)
  • Place a strainer on top of pot and add to it the sautéd onion and carrot. Mash with a spoon until all the juice from the vegetables is out. Throw the vegetables away.
  • Bring the soup to a boil, then add salt to taste.
  • Remove from heat and serve with a sprinkle of fresh dill and toast.
